Summer Popsicles!

It is so stinkin' hot these days!


Which means...


We are now in full popsicle making mode!



I mean, really...


What's summer without popsicles???




Creamy {and Dairy Free} Tropical Pops

3 cups coconut milk {fyi ~ can be bought in a carton near the soy milks at Walmart}
2 bananas
2 peaches or nectarines
1 cup frozen mango chunks
1 tsp pure vanilla
sweetener, to taste
Combine everything in blender until nice and pureed.  Pour into popsicle molds and freeze for a few hours.  Then go enjoy in the cool shade of summer! 

This is currently one of my favorite new popsicle flavors because the coconut milk makes them so creamy!!!  YUM!!!  But I cycle through a lot of different popsicle flavorings.  A lot of times I will just throw whatever fruits I have around into some vanilla yogurt to freeze.  Sometimes I even freeze any leftover Odwalla green smoothies {those are the only "green smoothies" the toddler will currently touch!  But hey, at least its a step in the right direction!} Sometimes we just freeze fruit juice.

for tasty, refreshing summer popsicles!

  1. I almost bought a popsicle maker thingy like yours and didn't because I am hooked on Whole Foods lime popsicles. They are so good, and inexpensive it's hard for me NOT to buy them. Maybe when I get tired of them, I'll take the plunge and buy a popsicle form set for myself.

  2. Wait! Lime popsicles at Whole Foods??? Dang! I wish I had one of those places closer to me! I love lime popsicles!!! The ones I used to eat in Brazil seriously quenched thirst in the hot humidity!!!

  3. I'm not a popsicle fan - ice makes my teeth hurt. My husband is happy to chomp away on lime popsicles, though. I'll always cherish the creamsicle and used to order the orange and vanilla twist cones at McDonald's (they don't serve them anymore, which is really a crying shame).

    Have you made Adrienne's banana ice cream? You could probably put the puree in a popsicle format; the addition of coconut milk and cinnamon would be so awesome!
