Rustic Whole Grain Rolls

The other day my sister in law made these fabulous homemade {with love!} whole grain rolls.  Her kids hated them.  Or maybe they were afraid of them because they have {gasp!} seeds in them!  So she gave them all to me!


It's too bad they didn't like them because they really were quite tasty!  But I, um, don't really feel all that bad because now they're MINE!  ALL MINE!!!  Wahahaha!

Pumpkin Spice Warmer

The weather was cold and dreary today.  A few in the family have been battling colds and runny noses so we have been blissfully drinking our herbal teas lately.  But as the flurries began to fall this afternoon I decided to have some fun and bust out a Pumpkin Spice Warmer instead of  hot chocolate for the kids when they came inside from playing in the snow.


Pumpkin Spice Warmer 
4 cups milk {or milk substitute}
1 cup Sucanat {or brown  sugar}
1 cup canned or cooked pumpkin
4 tsp pure vanilla
1 tsp pumpkin pie spice
Combine everything in a saucepan and heat on medium high.  Stir until heated through.  Serves about 4.

Easy peasy lemon squeezy!   My daughter said it was like drinking a pumpkin pie!  Mmmm!  Pumpkin pie!  Yum!  :)  If you're like me and don't like things quite as sweet, you could decrease the amount of sugar.   But really this has a nice, comforting flavor that is fun for colder weather.  Enjoy!

Danger! Danger!

Today I found myself in a dangerous part of town.

I entered the world of Tony Caputo's Market & Deli.

A place offering dangerous regional, Italian and 
Southern European culinary delights


I found myself taste testing so many fabulous olive oils 
and balsamic vinegars!  

Oh my gosh!  

The flavors of good oils and vinegars are unbelievable!

You will never go back to the regular ol' supermarket varieties again!

I had to stop myself before buying the small,
perfectly aged {for 12 years!} bottle of $75 balsamic vinegar!

Someday I will go back for it!

So we ran away to another part of the store 
to buy some grass fed beef that
Canyon Meadows Ranch was offering.  

But along the way we found...


Chocolates!!!


The pictures do not do these chocolates justice.

They sparkle like jewels!

And taste divine!!!

Someday I will learn to make my chocolates
look and taste as fabulous as those!


I had the kids with me and they each bought
some special treats.  

I'm wishing we would have bought some of the
specialty hot chocolates to sip.

Guess I'll just have to go back!

Bummer.

Cranberry Heaven!

This is the time of year to stock up on fresh cranberries!  I like to buy a few packages and throw them in the freezer every fall.  Cranberries can be so elegant and are pretty versatile actually!  You don't need to just eat them on Thanksgiving as a sauce.

Here is another way to enjoy them this season!  This recipe is actually a bonus two-in-one recipe!   You make sweet and tangy sugared cranberries that you can add to candy bowls, your favorite apple pie recipe, as a topping on cheesecake, baked brie, pancakes or even on top of ice cream!  But wait!  There's more!  The sauce it cooks in becomes a tasty, spicy syrup that almost tastes like candy canes which is a fun addition to your holiday breakfasts this winter!

Sugared Cranberries and
Cranberry Spice Syrup



Sugared Cranberries
 Makes 3 cups cranberries
3 cups sugar
2 cinnamon sticks
6 whole cloves
3 cups water
3 cups fresh cranberries, rinsed
1 cup superfine sugar

Mix sugar, cinnamon sticks and cloves with water in a saucepan. Bring to a boil over medium heat. Simmer for 1 minute, stirring until sugar dissolves. Remove from heat and pour into a bowl. Stir in cranberries. Cover and refrigerate for about 8 hours. Drain cranberries. Reserve liquid, strain out cinnamon sticks and cloves and use as a simple syrup to add a holiday touch.

Place superfine sugar in a bowl and gently toss in cranberries, coating evenly. Place cranberries on a baking sheet to dry, about 1 to 2 hours.

Store in an airtight container.


To Can Syrup

Fill jars, leaving 1/4 inch headspace and boil in water bath canner for 20 minutes. When serving, if you'd like a thicker syrup, simply add a little cornstarch before heating it up.

Favorite Thanksgiving Recipes

Thanksgiving is coming up fast! Many of my stateside friends are gathering up all the ingredients for their own traditional Thanksgiving dinners.  I love that it is a holiday filled with tasty food traditions!  I love celebrating with food!

So today I thought I would share two of my favorite recipes that are always at our Thanksgiving meal.  To me, it just isn't Thanksgiving without them!

First up!  A scrumptious cranberry sauce!  Not your ol' goo from a can!  This is made from real, fresh cranberries and is chocked full of other fruity goodies!


Scrumptious Cranberry Sauce

1 cup water
1 cup white sugar {or sweetener of choice}
12 oz package fresh cranberries
1 orange, peeled and pureed
1 apple, peeled, cored and diced
1 pear, peeled, cored and diced
1 cup chopped dried mixed fruit
1 cup chopped pecans
1/2 tsp salt
1 tsp ground cinnamon
1/2 tsp ground nutmeg

In a medium saucepan, boil water and sugar until the sugar dissolves. Reduce the heat to simmer, and stir in rest of the ingredients. Cover and simmer for 30 minutes, stirring occasionally, until the cranberries burst. Remove from heat and let cool to room temperature.

Leftovers taste great as a pie, wrapped and baked in phyllo, as a crisp, spooned over ice cream or baked over brie, as well as more traditional uses such as on a turkey sandwich.

The next one is a family favorite passed down through the generations--my grandmother used to make this, my mom makes this and now I do too.  I don't have an old picture in my files of this one yet, but I will add one to this post after I make it this year.

Yams and Apples

6 sweet potatoes, cooked and sliced thinly
6 small apples, peeled and sliced thinly
1 cup orange juice, mixed
2/3 cup sugar {or other sweetener of choice}
1 stick butter
2 tablespoons cornstarch

Layer yams and apples in a buttered casserole dish. Combine ingredients for sauce. Stir and cook til thick and smooth Pour over yams and apples. Bake at 350 for 1 hour.

Waaaayyy better than anything with marshmallows on them! To me, this is the only way to enjoy yams! And for those that say they don't like yams, I always think to myself that they certainly would if they ever tasted this recipe!  These are not your average yams with carmelized brown sugar, or marshmallows on top but a delicious fruity blend with apples and orange juice!  I'm telling you, it is TASTY my friends!

Asian Lettuce Wraps

I was going through some pictures I had taken over the summer and realized I had taken a picture of these yummy lettuce wraps but had never gotten around to blogging it!  These were seriously sooo tasty! They're a little sweet and a little spicy and taste perfectly light and filling on a hot summer's day! 


Asian Lettuce Wraps 
{or aka Asian Tacos}

3 Tbsp unsalted, dry roasted peanuts, chopped
3 Tbsp hoisin sauce
2 Tbsp raw apple cider vinegar*
2 tsp low-sodium soy sauce or liquid aminos*
1/2 inch ginger, freshly minced
1 tsp dark sesame oil
1/4-1/2 tsp crushed red pepper
1 large clove garlic, minced
2 cups shredded cabbage
1 large carrot, grated
1 cup canned, sliced water chestnuts, diced
1 cup finely diced cooked chicken breast {optional if you want to go meatless}
12 Bibb or Butter Leaf lettuce leaves**

Place the peanuts in a small nonstick skillet over medium high heat and cook for about 3 minutes or until they are lightly browned by shaking the pan frequently.  Remove from heat and set aside.

Combine hoisin through garlic in a small bowl and mix well with a whisk.

In a medium sized bowl combine the peanuts with the cabbage, carrot, water chestnuts and chicken.  Add sauce and mix well.

Spoon the chicken mix in the center of a lettuce leaf.  Roll like a taco and enjoy!

* raw apple cider vinegar and liquid aminos can be found at the health food store

Mmm!  Mmm!  Good!  I like the filling on this one chilled or warmed up ~ it's good both ways!  

Here is another version we tried this summer.  Unfortunately I never took a picture of this one.  :(  But it looks a lot like the other one so use your imagination!  ;)

Beefy Asian Lettuce Wraps

1 lb lean ground beef
1 large onion, chopped
2 cloves garlic, minced
1 Tbsp soy sauce or liquid aminos*
1/4 cup hoisin sauce
2 tsp minced pickled ginger**
1 Tbsp rice wine vinegar
8-oz can sliced water chestnuts, drained and chopped
1 bunch green onions, chopped
2 tsp dark sesame oil
16 Boston, Bibb or Butter lettuce leaves

In a medium skillet over high heat, brown the ground beef.  Drain and set aside to cool.  Cook your onion in the same pan, stirring frequently until sofened.  Add the garlic, soy sauce, hoisin, ginger and vinegar to the onions and stir.  Stir in the water chestnuts, green onions, sesame oil and the cooked beef.

Spoon a portion of mixture into center of a lettuce leaf.  Roll like a taco and enjoy!
* liquid aminos can be found at the health food store
** pickled ginger can be found at Asian food stores

If you times these recipes about three times each they will each fill up a large crockpot to take to a potluck or large gathering!  Be sure to use the Boston/Bibb lettuce because they are nice and mild and don't fall apart when you roll them!

Cowboy Caviar

Today is Pioneer Day in Utah ~ it's our Statehood Day when we celebrate the day the Pioneers settled the area.  I love it for many reasons but also because it means we get huge firework shows not once, but twice during July!!!

And it's a great day to break out the good ol' fashioned food like dutch oven goodies, cobblers and cowboy caviar!  {I'm not sure they really would have eaten cowboy caviar, but I like to pretend!  ~wink~wink~}

There are lots of different versions of Cowboy Caviar out there, but here is my quick and easy version of it:


Super Easy Cowboy Caviar

1-2 packages frozen Southwestern mixed vegetables, thawed
1/3 cup agave nectar {or sweetener of choice}
2/3 cup raw apple cider vinegar
tortilla chips

Place thawed vegetable mix in a bowl and pour agave and apple cider vinegar on top and mix well.  Eat with tortilla chips.  YUM!!!

See?  I told you it was easy!  You can also just make your own vegetable mix by dumping in fresh or frozen corn, black beans, and chopped bell peppers, but I like the quick and easy route most of the time!  I've also brought a frozen package or two on camping trips just because it's so easy!

You can also use this same veggie mix for a super quick and easy dinner burrito!

Super Quick and Easy
Southwestern Bean Burrito

1-2 packages frozen Southwestern mixed vegetables, thawed
Cheese
Tortillas
Rice, optional

Fill a tortilla with the rice {if using} and veggies {don't put the sugar/vinegar dressing on this one!  Use just the plain ol' veggies!} and top with cheese.   Warm it up til it is warm and  melty!  

Yeehaw!  Soo delicious!

Summer Popsicles!

It is so stinkin' hot these days!


Which means...


We are now in full popsicle making mode!



I mean, really...


What's summer without popsicles???




Creamy {and Dairy Free} Tropical Pops

3 cups coconut milk {fyi ~ can be bought in a carton near the soy milks at Walmart}
2 bananas
2 peaches or nectarines
1 cup frozen mango chunks
1 tsp pure vanilla
sweetener, to taste
Combine everything in blender until nice and pureed.  Pour into popsicle molds and freeze for a few hours.  Then go enjoy in the cool shade of summer! 

This is currently one of my favorite new popsicle flavors because the coconut milk makes them so creamy!!!  YUM!!!  But I cycle through a lot of different popsicle flavorings.  A lot of times I will just throw whatever fruits I have around into some vanilla yogurt to freeze.  Sometimes I even freeze any leftover Odwalla green smoothies {those are the only "green smoothies" the toddler will currently touch!  But hey, at least its a step in the right direction!} Sometimes we just freeze fruit juice.

Pesto Filled Tin Foil Dinner

I hope all my fellow American friends had a safe and happy Independence Day  weekend!  We sure did!  It was filled with multiple nights of fireworks, hanging out late with neighbors, birthday parties, some backyard camping and tin foil dinners!  We seriously had a blast!

I made a new tin foil dinner inspired by one from Vegetarian Times last year.  I really didn't want the standard hamburger patty with carrots and onions and {gasp!} cream of mushroom soup anymore.  I wanted something different.  Something a little healthier.  Something a little more exciting.  So I decided to make a pesto filled packet with lots of veggie goodness in it!


Pesto Filled Tin Foil Dinner

{the ingredients on some of these aren't real specific 
because it will just depend on how many packets 
you are preparing.  But don't worry ~ 
this is easy peasy lemon squeezey!!}

small new potatoes, thinly sliced
vegetable broth
12 oz package frozen artichoke hearts, thawed
2 cups fresh or frozen peas, thawed
2 medium leeks, thinly sliced, white and light green parts
jar of pesto
romano or parmesan cheese
freshly chopped basil

Lay out your tinfoil and bend up the sides to create a small bowl for your food.  Layer as many potatoes as you would like on the bottom and drizzle with a small amount of vegetable broth.  Combine the artichoke hearts, peas and leeks in a bowl and cover and mix with pesto.  Scoop as much of the pesto veggies as you would like into your packet on top of the potatoes and wrap up your tin foil packet.  Cook either on hot coals in your campfire or on a grill {or even your oven at 400} for about 25-30 minutes.  Carefully open the packet and sprinkle romano or parmesan cheese and basil on top.  Enjoy!

The artichoke hearts give the packet a nice big bite of substance that makes you not even miss the meat!  But feel free to play around with the amounts.  For instance, my daughter wanted more potatoes than artichokes so next time I will probably fill hers with more potatoes.

Refreshing Limeade For A Hot Summer Day

I ended up with a ton of limes from my recent Bountiful Basket, so I decided to make a pitcher full of refreshing limeade for a hot summer day!



Refreshing Limeade

3/4 cup freshly squeezed lime juice
3 cups crushed ice
3/4 cup agave nectar
1 1/2 cups water

Combine everything in a blender and blend until nice and slushy!  Pour into a glass and enjoy!


This totally hit the spot on a hot summer day!  It was seriously sooo refreshing!  Kind of reminded me of the lime popsicles we used to buy in Brazil back in the day.  Now those were amazing!  They really quenched your thirst!  I haven't found one like it here in the States yet.  But this is just as tasty as I remember those popsicles being!  Mmm!  You've got to try it!

Simple Breakfast


Cantaloupe Blueberry Bowl

Cut a cantaloupe in half and scoop out the seeds.  Fill the center of the cantaloupe with fresh or frozen blueberries.  Take your spoon and scoop a slice of cantaloupe and berries to pop in your mouth and enjoy!

And shocker of all shockers!  My toddler will now eat it because I told him that the cantaloupe will make him run fast and blueberries will give him the brain power to be a really cool superhero!  

SCORE!!!

Lunch Bunch: Easy Dinner Ideas

This is turning out to be rather interesting.  This months Lunch Bunch is all about easy dinner ideas you can pull from when you just don't want to cook anything.  And the funny thing {to me} is that I really don't want to cook anything lately, and I'm even having a hard time trying to get this post finished, because frankly, I'm just not in the mood.  It must be the weather.  All the rain is beginning to affect me I think!

So!  In reality, I probably really need this post!  So without further adieu {or is it ado in this case?  See?  I'm stalling again!}, let's get to some of my favorite easy dinner ideas:

Pastas are always easy.  It just takes a few minutes to cook the noodles and it can be as simple as noodles and heating up sauce if you really want.  Here is one of my favorite pasta versions:


My Version of Olive Garden's
Capellini Pomodoro

Angel hair pasta {or spaghetti}
4-5 fresh tomatoes, chopped {or drain a can of diced stewed tomatoes if you're super short on time and don't want to take the time to chop your own}
1 clove garlic, minced
Basil, to taste
Salt and pepper, to taste
Olive oil


Cook angel hair pasta {or spaghetti}.  Add tomatoes to cooked pasta and add 1 minced clove of garlic and sprinkle enough basil to pepper it nicely.  Add salt and pepper to taste.  Drizzle with olive oil.  Mix together well into cooked pasta.

This pasta is an intuitive recipe for me and very forgiving.  Not a lot of measuring, or exact ingredients.  I just sort of wing it.  If you want more tomatoes {or less}, add them {or subtract them}. Open a bag of salad and you're ready to go!  {See?  I don't even want to take the time to wash my salad sometimes!  Pre-washed and cut can be a lifesaver!}


Let Someone Else Cook

Another easy dinner idea is to let someone else do the cooking for you!  No, I don't mean run out and grab a fast food hamburger or anything!  I mean, run to the store and grab a whole roasted chicken from the deli!  Then all you have to do is heat up some frozen veggies on the side to round it out.  Easy peasy!

Let's see, what else?

Dinner salads!  
 Like I said above,
Pre-washed and cut salad mixes are genius!
Here are two of my favorites!

Southwestern Salad

Salad:
1-2 cans red kidney beans, drained and rinsed
Shredded or diced chicken, optional
Shredded cheddar cheese
Diced tomatoes
1-2 bags chopped romaine lettuce
1/2 bag of crushed tortilla chips

Ranch Dressing:   {do not use a bottled ranch for this salad ~ trust me!  It will taste all wrong if you do!}
1 1/2 cups mayonnaise
1 cup buttermilk
1/2 tsp garlic salt
1/2 tsp onion salt
1/4 tsp pepper
1/2 tsp dried parsley

Combine dressing ingredients and mix well.  Combine everything in a bowl, cover with ranch dressing and mix well to coat.  

Again, the amounts are more to taste rather than specific amounts.  This is also a very forgiving recipe.  The ingredient list looks longer than I like when I'm not in the mood to cook, but it really doesn't take much time to throw this one together.  I like the crunchiness the crushed tortilla chips give to this recipe.    

Want an even easier ranch dressing for this salad?  Then just use the dry buttermilk ranch dressing packets you can buy at the store ~ just don't use a pre-made bottled ranch dressing, I'm begging you!  Just don't do it! 


Apple Tomatillo Dinner Slaw

Salad:
1-2 bags premixed coleslaw {without dressing in it}
2-3 apples, chopped in pieces
1 can red kidney beans, drained and rinsed
Diced chicken, optional

Dressing:
1 pkg dry buttermilk ranch dressing
3 tomatillos
1 cup mayonnaise
1 cup buttermilk
1 cup cilantro
1 clove garlic
1/4-1/2 tsp cayenne pepper

Mix salad ingredients together in a large bowl.  Combine all of the dressing ingredients in a blender and blend.  It will thicken gradually.  Pour dressing over salad to coat it, and mix well.

This salad looks like it has a lot of ingredients too, but it is super fast because you just throw the dressing in the blender and let the blender do the work.  You don't even need to chop the cilantro before throwing it in, just measure it and push the start button!  The hardest part of this recipe is chopping the apples!  Love that!

What Put ~B. Into Near Bliss?

Sorry about that cliff hanger yesterday.  
But what I am about to show you 
just seemed to deserve its own post.

The thing that put me 
almost over the edge in bliss 
the other day were these:

to~die~for 
{and healthy}

MACAROONS!!!



 They are super easy to make
here is how:


Macaroons
If you can't find some of these ingredients,
then check your local health food store
or specialty supermarket!

2 cups shredded, unsweetened coconut
1/2 cup raw unsalted, unroasted almonds {ground into a powder in your blender}
2/3 cup agave nectar 
1 tbsp coconut oil
1 tsp pure vanilla
1/8 tsp sea salt

Combine everything in a bowl.  Scoop out in spoonfuls and squeeze them in your hands to form a tight little ball, then flatten them out and place on either a teflex dehydrator sheet or cookie sheet.  If you are dehydrating them, then dehydrate for 6-8 hours at 115 degrees.  If you are baking them in the oven, then bake them for about 15-20 minutes at 325 degrees, but watch to be sure you don't burn them and adjust the time if necessary.

Sunshine In A Glass: Mango Pudding Recipe


We had some extra mangoes hanging around from a recent Bountiful Basket so I decided to whip up a divine pudding recipe I learned from our family friend Marta, who lives in Brazil.

We were kicking ideas around to give it an English name you all could understand because pudim de manga {in portuguese} AND mango pudding {in English} both sounded a little boring, and well, this one just needs something a little more exotic!

My husband wanted to call it chique-chique after a little town near where we lived in Brazil ~ that would be translated to chic, like "you are so chic, darling!" {and you truly are!}, not chick like the cute baby chickens {though they're cute too}!  But if you want to hear how it is pronounced, then click on over here ~ it is pretty darn cute!  That's why I love portuguese!  If languages could be called "cute" then Brazillian portuguese would be it!  But I digress... the name in the end that I keep thinking of is...

Sunshine In A Glass

2 mangoes, peeled and removed from pit
1 can sweetened condensed milk
1 cans worth {poured into empty sweetened condensed milk can} of heavy whipping cream

Place everything in a blender and blend until smooth.  Pour into serving dishes and chill until ready to eat.  Enjoy!

It is sinfully delicious I tell you!  So sinful I don't even want to know how many calories this baby has!  So if you can come up with a more exotic sounding name, then I'm all ears!

Pizza and Calzones

One of my favorite ways to clean up the fridge {and save money} is to make pizza or calzones at the end of the week.  You can throw so many things on those ~ you don't have to eat a standard fare pizza.  Oh no! Feel free to get creative!  Go gourmet and make your own creations!

For a pizza or calzone you will need pizza dough. Making your own dough requires a little bit of forethought, but it really isn't that hard to make.  Plus, it uses fairly inexpensive ingredients to help you save some "dough"!  Ok, I just couldn't resist!  I had to throw that in for you!  

Here is my favorite pizza dough recipe:

Pizza Dough:
2/3 cup lukewarm water
1 pinch sugar
1 1/2 tsp dry yeast
1 tbsp olive oil
2 cups unbleached white flour
1 tsp salt
To make dough:
Stir together 1/3 cup water and sugar in a large bowl.  Sprinkle yeast over the mixture and let stand until foamy {about 10 minutes}.  Stir in the remaining 1/3 cup water, the olive oil, flour and the salt.  Knead the dough by hand on a floured surface for about 10 minutes or in a food processor for about 5 minutes.  Put dough in a deep, oiled bowl and turn to coat it with oil.  Let dough rise, covered with plastic wrap in a warm place for about 1 hour or until doubled in bulk.  Punch down the dough and form into four balls.  Each will make a serving size pizza.
Ok, so now you have your dough ready.  Now is the fun part of creating the toppings for your pizza or stuffing for your calzone.  Like I mentioned above, a lot of times I throw on whatever veggies are still hanging around in the fridge.  A little bit of spinach?  Sure!  White bean  puree?  Why not!  I've even been known to throw on some steamed sliced carrots!  But you could always throw on some leftover chicken with barbecue sauce too.

If all this seems a little too adventurous, you can always use your favorite toppings or find some new variations in cookbooks.  But I am going to give you two of my favorite recipes that I was considering giving Adrienne when she asked me for some cost~friendly meal ideas. 

First up ~ a butternut squash pizza!  This is a great recipe to use up some of the root storage vegetables throughout the fall and winter.  Come to think of it, your dough ingredients can all easily be stored in your food storage too!  Score! 


Butternut Squash Pizza

1 cup sliced onion
1/2 butternut squash, peeled, seeded and sliced thinly
1/2 tsp dried rosemary, sage or herbes de provence
salt and pepper to taste
3 tbsp olive oil {1 tbsp reserved}
2 tbsp parmesan cheese {ok or more if you feel like it needs it! And um, mine usually does because I um, really love cheese!}
Pizza dough

Preheat oven to 400.  Combine onion through olive oil {except for the reserved tbsp} in a roasting pan and mix well.  Roast for 20 minutes, or until onions are beginning to brown and the squash is tender.  Roll out pizza dough and place on baking sheets sprinkled with cornmeal.  Distribute squash mixture evenly and bake at 450 for 10 minutes or until crust is firm.  Take out of oven and sprinkle with parmesan and drizzle with reserved olive oil, then enjoy!


My other favorite recipe is a zucchini-tomato calzone.  It is wonderful in the summertime when the garden is overflowing with fresh home grown tomatoes and zucchini!  But if you are having a hankering for this on the off season, the tomatoes and zucchini aren't too expensive and it still makes quite a tasty meal!


Zucchini Tomato Calzone

2 tbsp olive oil
1 1/2 cups sliced onions
1 small zucchini, grated {or about 2 cups}
1 clove garlic, minced
1/4 cup parmesan cheese
2 medium tomatoes
salt and pepper, to taste
1/4 cup chopped basil
pizza dough

Heat 1 tbsp olive oil in a pan over medium high heat.  Add the onions and cook for 5 minutes or until softened.  Transfer to a plate.

Heat the other 1 tbsp olive oil over high heat and once it is very hot, add the grated zucchini and garlic.  Stir often and make sure it doesn't burn for about 2 minutes.  Remove from heat and add the parmesan, salt and pepper.

De-seed the tomatoes by cutting in half crosswise and squeeze the seeds and juice out.  Chop them into a bowl and season with salt and pepper.

Roll out pizza dough and place a layer of onions, followed by tomatoes then zucchini into the middle.  Sprinkle with chopped basil.  Fold dough over and moisten edges with water and press edges together with fingers to seal.  Place on a baking sheet sprinkled with cornmeal and bake at 450 for 15 minutes or until golden brown.  Enjoy!

Chocolate Covered Bananas

I was playing around with the fabulous fudge sauce again.  Oh my goodness, I cannot get enough of it!  Dark chocolate?  Yes ma'am!  Healthy chocolate?  Bring it on!

Don't believe me that chocolate can be healthy?  Just google it and you'll see ~ dark chocolate health benefits ~ but in a nutshell it is extremely high in anti-oxidants, has properties similar to polyphenols which are found in black tea and red wine which are proven beneficial for heart health.  It also helps lower the bad cholesterol {LDL's ~boo, hiss!} while raising the good ones {hooray for HDL's!}.  It helps reduce the risk of heart attack, strokes, high blood pressure and may even reduce the risk of cancer!  But wait!  There's more!  It also includes nutrients such as calcium, magnesium, potassium, folic acid, B2 and B6!

It was so valued in the ancient Americas as food, medicine and beverage that it eventually became the official currency!  The Aztecs even required their citizens to pay their taxes in cocoa beans!  Those Aztecs were onto something I tell you!   They knew what a valuable commodity it was!  I'm surprised it isn't our currency even still today what with the world's almost crazy obsession with it! 

We once threw a dessert party at our house and I am not kidding you, every.single.dessert {except one} that came was chocolate!  We're obsessed people!  Obsessed!!!

So here is what I propose.  It is a simple switch.  Just switch out your cocoa powder for the real stuff.  The cacao powder before it is heat treated and processed and the nutrients are damaged.  I mean, if you're going to eat chocolate, you might as well eat the real stuff and get the health benefits out of it!  Seems like a no brainer to me!  But I digress...

I was telling you my latest creation with the fudge sauce.  It is so tasty, my friends!  This time I decided to dip bananas into it and then roll them around in crushed almonds.  Whoa! Tasty yet so simple!  Check it out:




Chocolate Covered Bananas

1 cup coconut oil, gently warmed*
1 cup agave nectar*
1 cup raw cacao, or unsweetened cocoa powder*
1 cup crushed raw almonds, or more as needed
Bananas, sliced about 1" thick, as many as desired

Combine coconut oil, agave and cacao in a blender until smooth.  Gently warm for a runnier sauce or place in fridge to thicken the sauce if needed.  Dip banana slices in fudge sauce and roll in crushed almonds to coat.  Place on a dish and freeze.  Serve frozen or thawed for 5 minutes or so.

This one truly is a healthy and tasty dessert!  And just goes to prove, yet again, how versatile that fudge sauce really is!

Lunch Bunch Linkup: Breakfast Recipes

Our lunch group had a hard time getting together again this month due to school field trips, dentist appointments and various other things going on at the same time.  So this month I am going to give you some of my favorite breakfast recipes.  I hope you will post your favorite breakfast recipes and link them up to us so that we can all drool ~ er, I mean, be inspired with something new!  ;)

This recipe is a favorite of mine when the strawberries are in season. They're not growing in my neck of the woods yet, but they were on sale at Walmart for $1.88 today! A month ago they were like $4 or $5 a basket! So yeah, I had to snap them up! 


Strawberry Banana Breakfast Bowl

Slice into your bowl as many bananas and strawberries as you like.  Then drizzle with your favorite sweetener.  I used a little drizzle of agave because it is low glycemic, but you could sprinkle sugar, honey or maple syrup on it if you wanted.  You could probably add some crushed walnuts or your favorite nut of choice if you wanted!  Enjoy!

This next recipe is a family favorite at our house.  It is the first breakfast my mother-in-law ever made me when I went home to meet my husbands family.  It is the one breakfast my daughter always requests whenever we visit Grandma.  And a fall favorite when the apples are in season.

I need to play around with this one a little bit though ~ I haven't figured out a totally healthified version yet.  I'd like to make it more whole grain and figure out how to make the apple syrup without as much sugar and other stuff.  There is definitely room for improvement, but it is pretty darn tasty the way it is.


Apple Pancakes with Apple Syrup

For the pancakes:
3 cups flour
5 tsp baking powder
1 tsp salt
2 Tbsp sugar
2 eggs
2 cups milk
1/3 cup olive oil
2 small apples, peeled and diced

For the syrup:
1 cup sugar
1/4 tsp cinnamon
2 Tbsp lemon juice
2 Tbsp cornstarch
2 cups apple juice
1/4 cup butter

For the pancakes:  Mix together sugar, eggs, milk and oil.  Add flour, baking powder and salt.  Fry on a griddle.

For the syrup:  Mix all ingredients in a saucepan and bring to a boil.  Cook until thick.  Serve over pancakes.
