Festive Pumpkin Oatmeal

Want a healthy breakfast treat to start your day off right?  One that fills your home with the warm comforting smells of holiday spices?  This oatmeal adapted from a recipe out of the Deceptively Deliciousbook has quickly become one of our family favorites.  It's a true, homey comfort food! 


Festive Pumpkin Oatmeal Recipe

1 cup milk {or milk substitute}
1/4 cup Sucanat {or brown  sugar}
1/4 cup canned or cooked pumpkin
1 tsp pure vanilla
1/4 tsp pumpkin pie spice
1 cup old-fashioned oats

Combine milk, sugar, pumpkin and vanilla in a small saucepan and bring to a gentle boil.  Add the oatmeal and reduce the heat to a simmer until the oatmeal is soft and creamy.  Drizzle with pure maple syrup if you like.  Serves 2.


I just have to say that this recipe is hands down way ahead of any other oatmeal I have ever tasted.  Ever.  This one is truly special.  I hope you enjoy it as much as our family does!
