Peanut Butter Rice Crispy Treats ~ Healthified

This recipe is similar to the No Bake Snowballs. Ok, it's actually the same recipe, just not rolled into balls and rolled in coconut. I just felt like making them look a little more like rice crispy treats instead.  The amounts are doubled in this recipe to make a 9x13-inch pan size of nice thick yummy squares.



Peanut Butter Rice Crispy Squares ~ Healthified
2 cup natural peanut butter {without added sugars/oils etc}
1 cup honey
1/2 cup brown rice syrup*
5 cup brown rice cereal or brown puffed rice cereal*
1 cup oats
2-4 tbsp chia seeds*

Mix everything together in a large bowl.  Press the mixture into a 9x13 pan and cut into squares.

* you can find these ingredients at most health food stores

Reviews were mixed at the party I took them to.  They are sweet.  But if you're eating a lot of other really sweet treats {like we totally were}, these just won't taste as sweet.  But they are sooo much healthier for you!

The chia seeds also tended to scare people.  The chia seeds are the little black flecks throughout but you can't even taste them.  Seriously.  But they are packed with 19-23% protein and have three times more flavanols to fight cancer than blueberries and just two ounces of chia seeds will provide you more Omega-3's than 1 3/4 pounds of salmon!  Why wouldn't you put those in there?  Especially if you can't really taste them in it???

It's ok though.  I really don't get upset or offended if people don't like my food.  I know my taste buds have changed since starting to eat healthier {yours can too!} ~ so what tastes good to me, might not taste good to you.  I also realize that everyone is on their own personal journey, and we are all in different spots along that journey.  I can respect that.  But just trust me when I say, I think these were pretty darn tasty!!!
