No Bake Apple Snowballs

I sure have been having fun playing around with the snowballs lately. This creation is probably my favorite version to date! My vegan grandpa went nutso over these! So we made sure he had a plateful to take home with him!




No Bake Apple Snowball Recipe
1 cup oat groats {or oatmeal}
1 tsp ground cinnamon
1-2 cups dehydrated apple slices, diced into small pieces
1 cup natural almond butter or peanut butter{without added sugars/oils etc}
1/2 cup honey
1/4 cup brown rice syrup*
2 1/2 cup brown rice cereal*
finely shredded unsweetened coconut to roll balls in

Grind oat groats or oatmeal in a blender with cinnamon until a fine powder/flour like consistency that measures about 1 cup.  Mix everything together except for the coconut.  Roll the mixture into balls and then roll in coconut

* you can find these ingredients at most health food stores


I think these snowballs would make a great afternoon type snack.  I mean, they may technically be considered a cookie but they are protein filled with delicious goodness to tide you over until your next meal.  Or maybe they're just so super yummy that I'm just trying to think up more excuses just to eat them!  You should definitely give this version a shot!  Delicious!
